Aromatic and zesty, a contemporary citrus forward style gin for ultimate refreshment 

Our spirits are made from Verdelho grapes, harvested from 100-year-old vines in the Swan Valley of Western Australia. Our grape to glass distilling process gives life to a silky-smooth gin with greater complexity of flavour and aroma.

Serving Suggestion

A versatile gin that is enhanced with citrus and tonic. It pairs neatly in a Tom Collins, French 75, as well as Dick Bradsell's legendary Bramble. The Republic's signature serve Gin and Tonic is garnished with a thin slice of green apple.

      A zesty burst of fresh citrus, with subtle fresh apricot tones, and a lively honeyed ginger finish. Delicate lavender floral notes slowly reveal themselves.

      Deceptively elegant, bright and clean tasting Italian classic cocktail.

      30ml Full Bodied Gin
      20ml Campari
      20ml sweet vermouth
      Small pinch of sea salt

      Add all ingredients to a lowball glass.
      Fill glass with good ice and stir for 20 seconds.
      Garnish with an orange slice.

      A fruity punch perfect for spring.

      45ml Signature Vodka
      15ml Crème de cassis
      20ml fresh lemon juice
      1 tablespoon of sugar
      Sparkling wine

      Add all ingredients except for champagne to a highball glass. Stir ingredients to incorporate sugar. Fill glass with good ice and top with sparkling wine. Gently stir in sparkling wine. Garnish with fresh berries.

      A sophisticated and refreshing champagne cocktail.

      30ml Aromatic gin
      15ml fresh Lemon juice
      7.5ml 1:1 sugar syrup water
      Champagne or sparkling wine

      Add all ingredients except champagne to a cocktail shaker. Shake and double strain into a chilled champagne glass. Top with champagne and garnish with a lemon twist.

      Wet Martini

      The original martini. The more vermouth, the 'wetter' the martini.

      45ml Aromatic Gin
      15ml dry vermouth

      Add ingredients to a mixing glass. Stir for at least 20 seconds. Strain into a chilled martini glass. Garnish with a lemon twist, spraying the oils liberally over the glass.

      50ml Full Bodied Gin
      30ml fresh lemon juice
      20ml 1:1 eucalyptus honey syrup
      Small pinch of salt

      Add all ingredients to shaker. Shake with good ice and double strain into a chilled cocktail glass. Garnish with a lemon twist.

      EUCALYPTUS SYRUP: 100ml boiling water & 100ml eucalyptus honey, combined in heatproof bowl and store in fridge.

      By distilling spirits from scratch and making our own base spirit, we control the entire process from grape to glass. Distilling to 95% ABV, the magic mark for subtle fruit flavours and delicate floral notes of the grapes to carry through to our spirits.
