The Distillery Bar
Visit the distillery bar situated towards the back of our distillery. Take in the glory of our spectacular working stills, and enjoy one or many of our popular spritz range. We welcome Da Napoli, who have moved into Republic as a kitchen and pizzeria. Led by Naples natives Andrea and Antonio, the Da Napoli team, with their bespoke pizza ovens, is serving up authentic handmade pizzas and pasta to accompany the sessional bar experience.

Most recipes are not to try at home unless you have a bioscience degree and a blowtorch. Our team are expertly crafting modern signatures and twisted classics, with ingredients sourced locally or house made, from scratch in the Bar.
Da Napoli Pizzeria
Da Napoli is more than just a pizzeria—it’s a tribute to Naples, the birthplace of pizza. Founded in 2023 by Andrea and Tony, two passionate pizza artisans, Da Napoli was born from a shared vision: to introduce WA to the true essence of Neapolitan pizza, specifically pizza a ruota di carro—or cartwheel pizza.
True to tradition, Da Napoli pizzas are exceptionally light and airy, and packed with the true flavours of Italy. Authenticity is at the heart of the Da Napoli ethos. Ensuring the traditional essence of pizza is a must in Naples, and they take that responsibility seriously.
