To celebrate a fresh start of a new year, allow us to introduce the latest Craft Month feature at Flaggerdoot Bar by Jackalope.
For those who haven't experienced this remarkable venue yet, Jackalope is a luxury boutique hotel boasting a chef-hatted fine dining restaurant and vineyard restaurant on Victoria’s Mornington Peninsula.

Meet Food and Beverage Director Tanguy Charbonnet as he unveils his latest creation, "Riviera"
This cocktail encapsulates the opulence of the French Riviera, with its Mediterranean climate between France and Italy, and the refined flavours of Summer.
To highlight the season’s produce, Tanguy integrates local peaches, signifying a connection to the homeland, and a traditional preservation method to make a ‘shrub’. Shrubs, sometimes called drinking vinegars, are an infusion of fruit, sugar, and acid.
They were developed to preserve fruit before refrigeration existed. He creates a peach shrub to elevate the natural sweetness and acidity. It is paired with our Republic of Fremantle Signature Vodka "washed" with Coconut Milk, Cocchi Vermouth Rosa and fresh citrus.
The outcome is a distinctive and captivating flavour profile that harmonises tropical, tangy, citrusy, and floral notes, as described by the talented bartender. The cocktail is elegantly garnished with a beautiful isomalt disc adorned with flowers and peach dust, creatively crafted from leftover elements of the fruit.
Tanguy is very committed to sustainability, a practice evident at Jackalope, where recipes for shrubs, lacto-fermentation, and more are used to preserve natural elements beyond the season. Today, Tanguy shares the recipe for an incredible peach shrub, a key element in his cocktail.
