For episode five of Craft Month, we’re taking you into the dreamy rooftop bar on Chapel Street, Beverly Rooftop.
The cocktail bar brings the iconic pastel tones and interiors of Beverly Hills to South Yarra, while championing a food philosophy deeply rooted in ethical and locally sourced produce from Melbourne.
What sets Beverly Rooftop apart is the harmonious synergy between the kitchen and the bar, both sharing a sustainable vision that extends beyond the glass.
Meet Beverly’s Bar Manager, Roy Martins Das Neves
At the heart of the action, shaking up delightful cocktails, is Roy Martins Das Neves – the ingenious mind behind this month's Craft Month feature cocktail, titled "Nature Feels" after one of his favourite tracks by Frank Ocean.
This tantalising creation features the sustainable ingredient, white asparagus, a rare find sourced from Tasmania.
White asparagus, available in limited quantities during a brief seasonal window, becomes a star in Roy's hands. Collaborating closely with the kitchen team, the bar employs lacto-fermentation to preserve the delicate flavours of this precious ingredient.
This process not only extends the use of last season's asparagus but also showcases Beverly's unwavering commitment to sustainability and preservation.
A Symphony of Collaboration: Kitchen and Bar in Perfect Harmony
Beverly's approach goes beyond crafting exceptional cocktails; it's about capturing flavours at their peak, ensuring the highest quality outcomes both in the kitchen and behind the bar. The collaboration between the kitchen and bar teams not only minimises waste but also exemplifies a holistic and efficient approach to production.
Roy shares his perspective on the creative process…
“Coming up with cocktails is always fun, working with impeccable chefs and seeing how we can use kitchen waste for our drinks is fascinating to me.
Figuring out how to repurpose waste from one cocktail to incorporate into the next is challenging. I relish a good challenge, and I detest throwing things away.”

Melbourne's cocktail enthusiasts can order Nature Feels at Beverly Rooftop until the end of December 2023.
